1 12 ou. bacon, fried and crumbled
1/3 c bacon grease
1/4 c water
1 whole onion, chopped
6-8 medium squash, chopped (combine yellow squash with zucchini for color)
1 can cream soup (homemade recipe below)
1 cup panko
1 T butter, melted
Fry bacon and remove to drain reserving bacon grease. Fry onion, add squash and water and turn down to med-low. Cook, stirring occasionally, until soft. Cook down juices on low boil until liquid is reduced to 1/2 cup.
Add cream of chicken soup to 1 cup cheddar and stir until combined. Fold in squash. Top with bacon crumbles. Toss panko with melted butter and sprinkle on top.
Bake 350 for 30 minutes.
2 T butter
3 T flour
1 bouillon cube, crushed
1/2 cup water
1/2 cup milk
Melt butter. Whisk in flour and let come to a bubble. Add spices of choice (garlic powder, pepper, basil. . .depending on taste). Whisk in bouillon, water and milk. Stir until smooth.
