Recipe: Pumpkin Bread with Oil Substitution and Granola Topping

For these delicious looking, individual pumpkin breads, I used this recipe and made a couple of changes:

I added a smidgen of nutmeg and all spice.

for 1 cup oil, substitute: 3/4 c applesauce (hey, I used cinnamon applesauce too! Just decrease sugar) plus 1/4 oil.

I also sprinkled the tops of mine with a granola mixture I had on hand that included toasted coconut and oats.
