Easy Pecan-Caramel Truffles

This is a super easy recipe! It tastes like a turtle but with my preferred dark chocolate coating. Yum!

1 package Kraft caramels
1 1/4 cup pecan pieces (chopped fine)
1 1/4 cup rice cereal
1 tsp - 1 T heavy cream
smidgen of butter for your fingers
1 package semi-sweet chocolate chips (milk or white chocolate will also work great!)

Unwrap caramels (the hardest part) and place in microwave safe bowl. Microwave for 2 minutes until caramels begin to soften. Stir and continue to microwave until they are soft enough to melt just by continuing to stir. Add cream, starting with 1 tsp. This will make the caramel softer as it cools. Stir in pecans and rice cereal and stir until combined. With buttered fingers, roll out 1 inch balls, then let them cool completely. Meanwhile, melt chocolate chips in microwave until soft enough to melt by simply stirring. Dip balls into chocolate and place on parchment   or wax paper and let cool completely.
